This man's name is Omur.  He is the maitre d'hotel on the Carnival Miracle.  Here he is telling us about how much food they cook each day on the ship.  Grandpa Roy went to listen to him and tour the galley, the kitchen on the ship where they prepare all the good food.   The maitre d' is the person who makes certain everyone has a place to sit and is enjoying their meal.  Gee, just like Mom!
